Two of my favorite things: Watermelon and Malibu Rum!
Memorial Day 2020 was a bit different than celebrations past. My husband usually loves to host BBQs at
our house for friends and family, enjoying each other’s company, and being thankful for the freedoms
we have because of the lives of others. This year we did what we could on a much smaller scale to still
be mindful of precautions during the COVID-19 pandemic. We still BBQed and had one family over
because if I’m being honest, it’s feeling time for some social interaction. As restaurants opened today
for in-dining, we made the decision to open our backyard for some human interaction with people we
haven’t been cooped up with for the last 2 months. And let me just say, this was SO needed! We ate,
we talked, we laughed, and we experimented with 2 of my favorite things: watermelon and Malibu Rum!

I don’t know about you, but when I’m sitting outside in hot weather, nothing sounds better than
something cool and refreshing to drink. Even better if it has some kind of “mama” juice (if you know
what I mean!). I’m good at searching for recipes and found this one on the Malibu Rum website and it
was perfect for me! One part watermelon juice, one part Malibu Rum, ½ parts lemon juice, and some
soda water. Easy, simple, quick! My kind of recipe!
The thing about me is I am good at searching for recipes, but not so good at actually following them. I
just need the gist of what the recipe is and then I tend to roll with my own interpretation of it.
Watermelon juice? Sure, let me throw some watermelon into a blender with a splash of water, spend
about 5 minutes trying to figure out how to turn the dang blender on, and viola! Watermelon juice. One
part versus ½ parts? What does that even mean? And if it involves dirtying a measuring cup and adding
to my dishes, forget it. I can eyeball any kind of measurement needed. I don’t need precision. Soda
water? Hmmm, how about some raspberry bubbly? Mix it all together with some ice and then beam
with pride at my accomplishment.
My friend on the other hand IS a recipe follower. She mixed her own drink according to Mr. Malibu
Rum’s instructions, although she did go a little lighter on the rum pour. Hers is the short glass, mine is
the tall. Both delicious!
What I love about this is there are probably endless things I can try with this drink! Next time I’m ready
to experiment with this recipe, I’ll probably try some different flavored Malibu Rums, maybe pineapple.
Maybe even tequila to make it more like a margarita. I could also make things a tad quicker by using
store bought watermelon juice, like the one my husband pulled out of our fridge after being entertained
watching me figure out our Ninja blender. Yeah, he’s lucky he’s cute.
Watermelon Splash
1 part Malibu Original
1 part Watermelon Juice
½ part Lemon juice
Splash of Soda water
Erica’s Watermelon Splash
About ½ a cup of watermelon juice
Enough Malibu Rum to make the juice a light pink
Maybe about a shot of lemon juice (eyeballed guestimate)
Splash of Bubly raspberry sparkling water
