Easy Easter Brunch Idea: Make Ahead Egg Bake Recipe!

What are you making Easter Morning? Here’s an easy recipe you can make ahead, Just prep the day before and pop it in the oven the next morning!

What I did:

  1. Cut your baguettes into cubes.
  2. Lightly oil a 9×13 inch baking dish and dump in the bread cubes.
  3. Add olive oil to a large sauté pan over medium heat. Add onion and ½ teaspoon salt and cook for 5 minutes, or until soft. Add mushrooms and ½ teaspoon of pepper and cook for an additional 5 minutes. Add kale and Italian seasoning cook until wilted. Add 2 tbsp of butter, mix.
  4. Add vegetable mixture to the pan with the bread and mix.
  5. In a large bowl, whisk eggs, milk, and remaining salt, pepper and garlic powder. Add cheese and stir.
  6. Pour the egg mixture over the bread and vegetables, then cover tightly with foil. Let sit in the fridge overnight. Or you can cook right away if you choose.
  7. When ready to serve, preheat the oven to 350˚F. Bake, tightly covered in foil, for about 40 minutes.
  8. Uncover and bake for an additional 15 minutes, or until the center is puffy and the top is golden brown.
  9. Let cool slightly before cutting into squares and serving.

I didn’t let it sit over night and it was still great!

It’s a lot of kale, but the boys loved it. Great way to sneak in some veggies!!!
