4th of July Cocktail!

Another holiday, another cocktail!  I tried my hand at creating a drink that looked like Bomb Pops/Firecracker popsicles.  I’m not sure if I would call my attempt a bust or win, but either way, I had fun making it!  

Before you keep reading, just a few reminders about the kind of recipe person I am…  I do simple, I don’t do measurements, but I always have fun experimenting.  Cocktails are the perfect things to make for someone like me because they can easily be “fixed” to eventually make it taste good!  Just remember, I am NOT a bartender.  This is all in good fun!

To make this drink, I needed layers.  Red, white, and blue to be exact.  At the store, I bought pina colada mix, strawberry daiquiri mix, and was hoping for blue curacao, but they were out.  No worries because I usually have Hypnotic at home so I was sure I had something blue already in my cabinets.  I also grabbed simple syrup and colored sugar to put on the rim of my glassware.  Got home, got blender, ice, white rum, and all the fixings from my recent trip to the grocery store.  Reached for the Hypnotic only to find I didn’t have it anymore!  Darn it!  Plan B: the blue sugar I just bought…it would have to do.  

First, my husband made me a batch of pina colada and we put that in the freezer. Then we made the strawberry daiquiri.  The trick was to make them thick so we used a lot of ice.  We added blue sugar around the rim of our glasses using the simple syrup.  Next up was layering the red and white drinks.  We poured the daiquiri first then used a spoon like a ramp to pour the pina colada.  I wanted more blue so I poured more of the blue sugar right on top.  I also made some other creations using whipped cream and blueberries.  See below for how it all turned out.

So, they’re not perfect, but they were tasty!  As usual, my husband was a great sport and even posed with me by our waterfall.  

Things I would have done differently:

  1. Shopped earlier so I could find blue curacao in stock
  2. Called family before leaving store to make sure I did in fact have Hypnotic
  3. Placed glasses in freezer for a bit before adding next layer.  My layers started bleeding into one another.  Freezing it for a bit might have fixed that problem. 
  4. Bought a box of Bomb Pop/Firecracker popsicles. Just because.

 

Erica’s 4th of July Cocktail

Pour Simple Syrup onto a cutting board. Pour colored sugar (I had both red and blue, but only used blue) onto another section of cutting board.  Roll and dip glasses in syrup then do the same with the sugar.  

For Red Layer – make a batch of Strawberry Daiquiri (follow instructions of daiquiri mix with about a cup of ice), pour into glass and place in freezer until next layer is ready to be poured.  

For White Layer – make a batch of Pina Colada (follow instructions of pina colada mix with about a cup of ice), pour into glass and place in freezer until next layer is ready to be poured.  

For Blue Layer – blend blue curacao with a shot of white rum and about a cup of ice.  Remove glasses from freezer and pour as top layer.
