Super Bowl Food - My Spinach Dip Recipe
I don’t know about you, but I really don’t care about the Super Bowl. I’m more of a cheer for my kids’ soccer games kind of mom! With four boys and a husband who loves to play soccer I’ve been watching and cheering and screaming at soccer games for the last 24 years. When it comes to football and the Super Bowl, I may not care about the game, but I’m all about the commercials, half time shows, and snacks!
We usually host a Super Bowl party, but it looks like this year will be just us so I don’t need as many snacks as usual. I’ll be making my famous spinach dip! It’s famous because it’s what I bring to most parties since I’m vegetarian and don’t like cooking. We joke about it, but it disappears any time I take it!
Here’s what you need:
- Packet of Knorr Vegetable recipe mix. It should be in the soup isle.
- 1 box of 10 oz frozen chopped spinach. Sometimes the market has different sizes, just get what ever is closest.
- 1 container (16 oz) of sour cream or nonfat greek yogurt. I usually do the greek yogurt because it adds more protein to the recipe and it doesn’t really affect the taste or texture.
- 3/4 cup mayonnaise. I think mayo is gross. I actually stopped eating this for a couple years once I made it myself and found out it had mayo. But I think it makes the creamy texture. The only time we eat mayonnaise in my house is for this recipe and JT has it on sandwiches the day after Thanksgiving!
- 1 Can (8oz) of water chestnuts
- 3 Green onions
Directions: Thaw and squeeze dry the spinach. Rinse, drain, and chop water chestnuts. Wash and chop green onion. Mix it all and refrigerate for at least an hour. This is a good make ahead recipe. You can make it the day before an event and it will taste great. I serve it with Hawaiian bread but you can try crackers too
